EASY SWEETENED CONDENSED MILK BISCUITS
A classic no fuss, buttery chocolate chip biscuit. They’re easy to throw together and the dough doesn’t require chilling. Half a cup of chopped nuts or cornflakes would be a great addition to the recipe.
Makes 30 biscuits
INGREDIENTS
250g butter, softened
225g caster sugar
150ml sweetened condensed milk
1 teaspoon vanilla extract
310g plain flour
1 & 1/4 teaspoons baking powder
1/4 teaspoon table salt
350g dark chocolate, chopped or chocolate chips
Optional: 1/2 cup chopped nuts or cornflakes
METHOD
Heat the oven to 180ºC. Line an oven tray with baking paper.
In a large bowl, beat the butter and sugar until light and creamy. Add the sweetened condensed milk and vanilla essence and beat to combine.
Add the flour, baking powder, salt and chocolate and mix until well incorporated. If you’re adding nuts or cornflakes, now is the time to do so.
Roll the dough into tablespoon sized balls and place on a tray 4cm apart. I usually do 6 on each tray. Flatten the biscuits slightly with the back of a fork and bake for 11-13 minutes or until lightly golden.
