GREEN PESTO PASTA SAUCE
A punchy green pesto packed with garlic, parmesan and pine nuts. I've used spinach, rocket and basil as my leafy greens but you can use anything you have lying around.
Makes approx. 2 cups
INGREDIENTS
4 cloves of garlic
50g parmesan
50g pine nuts, toasted
100g baby spinach leaves
100g rocket leaves
1 spring onion
50g basil leaves
Juice of 1 lemon
150mls olive oil
1 teaspoon salt
Crack pepper
METHOD
In a food processor, blitz together the garlic, parmesan and pine nuts until you have a crumb. Add all remaining ingredients and blitz until smooth.
Serve with fresh pasta and extra parmesan.
