CHUNKY CHOCOLATE CHEWS

This recipe is based off a childhood favourite of mine. The Mrs Higgin’s Chocolate Chew and is as close to the real deal as I can get! The biscuit is rich, soft and chewy and is dotted with chunks of dark chocolate. I had a dream that if I added blitz cornflakes to the biscuit it would give them a great chew - and it works so well!

Makes 25-30 biscuits

INGREDIENTS

230g 70% cocoa solids dark chocolate
80g butter, softened
150g brown sugar 
65g caster sugar
2 size 7 eggs
100g plain flour
50g cornflakes, finely ground
20g cocoa powder
1 teaspoon baking soda 
¼ teaspoon salt 
250g 50% cocoa solids dark chocolate, chopped

METHOD

Melt the 70% dark chocolate in a heatproof bowl over a pot of simmering water. Then set aside to cool.

In a bowl or bowl of a stand mixer, cream butter and sugar until pale and smooth. Beat in the eggs one at a time, scraping down the sides with a spatula between each. Add the melted chocolate and beat to combine. 

Put the cornflakes in a food processor and blitz until a fine crumb forms.

In a separate bowl, sift together the dry ingredients and stir through the ground cornflakes. Add to the other mixture and mix to combine. Once well incorporated, add ⅔ of the chopped 50% dark chocolate and mix again.

The mixture will appear somewhat runny and more like a brownie batter than a biscuit dough, it will firm up considerably in the fridge. Heat the oven to 180ºC regular bake and line an oven tray with baking paper. Chill the dough in the fridge while the oven heats but not for much longer. 

Once the oven has reached temperature, roll 6-8 heaped teaspoon sized balls and place them on the tray, allow space for them to spread. Top with a few pieces of chopped chocolate and bake for 8-9 minutes. Leave on the tray to cool and harden slightly before transferring to a wire rack. Repeat with remaining dough.
