A delicious and easy recipe for light and super cheesy scones. Feel free to add any of your favourite ingredients to the mix.

HERB & CHEESE SCONES

INGREDIENTS

2 cups plain flour
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon smoked paprika flakes, or ground smoked paprika
1/4 teaspoon cayenne pepper
1/4 small red onion, diced
2 cups cheddar cheese, grated, plus extra for on top
1/4 cup parmesan cheese, grated
135g butter, cold and cubed
1/4 cup fresh parsley, chopped
2 tablespoons chives, chopped
220ml cream
100ml milk, plus extra to brush on top

METHOD

Preheat the oven to 190ºC and line 2 baking trays. 

In a large bowl or bowl of a stand mixer, combine the flour, baking powder, salt, smoked paprika, cayenne pepper, diced red onion and grated cheese.  

Using you hands or the stand mixer, rub the butter into the flour mixture until crumbled. Add the herbs, cream and milk and mix until well combined. The mixture will seem quite wet but it'll create nice moist scones. 

Place the dough on a clean, floured bench top and shape into one long log. Cut into 12 squares and place on the lined baking trays. Brush with milk and scatter over a generous handful of cheddar cheese. 

Bake for 20 minutes or until golden brown.
